Childhood Dreams
Chef NM‘s (Nicolai Mlodinow) love for food began at the age of four when his parents allowed him to assist in the kitchen. Throughout his life he noticed that when people are in sorrow they eat to be comforted and united, and when people are in happiness they eat to celebrate and be connected. Chef believes that no matter what the circumstance, if done correctly, food brings an overwhelming sense of belonging.
Accidental Beginnings
His passion for food tilted towards profession in university. The aromas of his cooking would spread through the frat house spiking curiosity. His friends started offering him cash to cook a little extra. Soon after, he was hosting weekly paid dinner parties for college students. News of his inspired cooking spread and the local Hillel Center invited him to cook shabbat dinners where hundreds of people got their first taste of Chef NM’s unique fusion cusine.
Michelin Training
After graduating from college, Chef NM moved to Chicago where he staged at the top Michelin star rated restaurants in the city. He trained at acclaimed restaurants like Alinea, Oriole, Schwa, Temporis, and more. At these world renowned establishments, he honed his skills, leveled up his technique, and learned to push the boundaries of creativity.
Class Act Dining
In the Spring of 2022, Chef NM launched Class Act Dining and began hosting 10+ course fine dining menus at secret pop-up locations. His monthly dinner series has become one of the hottest seats in town.
Chef NM aspires to inspire his diners. He hopes the creativity in the cuisine helps them see their everyday world differently and the conversations at the table turn into authentic connections away from the table.
